While I was in Palm Springs, Marty Hartley showed me how to make fattigman, a classic Norwegian Christmas cookie. With his family’s Norwegian background, it has become a tradition to make these cookies for the holidays.

Step 1: Marty mixes a dough of flour, eggs, whipping cream, sugar, butter, baking power, and cardamon.
Step 2: He rolls the dough out thinly to about an eighth of an inch.
Step 3: Using a special utensil, he cuts diamonds with a slot into the dough.
Step 4: He twists the end of the diamond into the slot.
Step 5: This creates a bow or buckle shape.
Step 6: The cookies are deep-fried in oil for half a minute, turning them over once.
Step 7: When lightly tanned, Marty removes them from the oil to a cooling rack.
Step 8: To finish them off, he dusts the cookies with powdered sugar mixed with cardamom.
Step 9: Fattigman cookies taste light and crispy. A wonderful holiday treat!
